Courgette Fritters
Ingredients
450g (1lb) courgettes (zucchinis), grated (shredded)
100g (3½ oz) Parmesan cheese
3 cloves of garlic, chopped
3 spring onions (scallions)
2 eggs
1 teaspoon dried mixed herbs
1 tablespoon olive oil
Sprinkling of salt
Serves 4 204 calories per serving
Method
Place the grated (shredded) courgette (zucchini) into a colander and sprinkle with a little salt. Allow it to sit for 30 minutes then squeeze out any excess moisture. Place the eggs, Parmesan, spring onions (scallions), garlic and dried herbs into a bowl and mix well with the courgettes. Scoop out a spoonful of the mixture and shape it into patties. Repeat for the remaining mixture. Heat the oil in a frying pan, add the patties and cook for 2 minutes, turn them over and cook for another 2 minutes. Serve warm.
