Gazpacho

Serves 6

Ingredients

1 15 ounce can garbanzo beans, rinsed and drained

6 cups no sodium vegetable juice

1 cup cherry tomatoes, halved

1/2 cup cucumber, seeded and chopped

1/2 cup red onion, chopped

1/4 cup fresh parsley or cilantro, chopped

1/4 teaspoon hot pepper sauce

3 garlic cloves, peeled and minced

1/4 cup fresh lime juice

6 lime wedges

Directions

In a large bowl, add the garbanzo beans, vegetable juice, tomatoes, cucumber, onion, parsley or cilantro, hot pepper sauce, minced garlic and lime juice. Mix well. Cover and place in the refrigerator for about 1 hour.

Serve the cold soup in individual bowls with a lime wedge garnish. Serve immediately.
