Classic Cheese Souffle
This recipe is adapted from the great Julia Child, and I think it’s the epitome of cheesy goodness.
SERVES 4 TO 6

tablespoon CBD Butter (page 7)

tablespoons all-purpose flour

cup whole milk, warmed to steaming
½
teaspoon paprika
½
teaspoon CBD Salt (page 13)
Pinch of nutmeg

egg whites

cup grated Gruyère, packed
Preheat the oven to 400°F and position a rack in the lower part of the oven. Butter a 6-cup soufflé dish, add the Parmesan, and tilt the dish so the sides are coated with the cheese. In a large saucepan over medium heat, melt the butters. Add the flour and whisk until the mixture starts to foam, about 3 minutes, taking care not to let it brown. Remove from the heat and let it sit for about 1 minute. Add the warm milk, whisking until smooth. Return to the heat and cook, whisking constantly, until very thick, 2 to 3 minutes. Remove from the heat and stir in the paprika, salt, and nutmeg. Add the egg yolks, whisking to blend after each addition. Scrape the mixture into a large bowl and cool to lukewarm. In another bowl, beat the egg whites with a hand mixer until they’re stiff but not dry. Fold about one-quarter of the egg whites into the egg yolk mixture to lighten it, then in two additions gently fold in the remaining whites. Carefully fold the Gruyère into the mixture, taking care to not deflate the egg whites. Transfer the batter to the prepared dish, place in the oven, and immediately turn the heat down to 375°F. Bake until puffed and golden brown and the center moves only slightly, about 25 minutes. Do not open the oven door during the first 20 minutes of baking. Serve immediately.
