POTATO BAKE

1 kg (2 lb 4 oz) all-purpose potatoes, such as desiree, scrubbed and very thinly sliced

80 ml (2½ fl oz/1/3 cup) olive oil

RED CABBAGE AND BROAD BEAN SALAD

½ red cabbage, thinly sliced(use green if unavailable)

400 g (14 oz/2 cups) frozen broad (fava) beans

10 g (¼ oz/½ cup) mint, chopped

10 g (¼ oz/½ cup) flat-leaf (Italian) parsley, chopped

125 ml (4 fl oz/½ cup) red wine vinegar

60 ml (2 fl oz/¼ cup) olive oil

1 teaspoon sugar

1 teaspoon salt
