22. Pear and Spinach Salad

You’ll only need a few minutes to toss this lovely salad together. The dressing is classically tangy, and it’s a wonderful addition to a meal.

Serving size: 4

Prep time: 10 minutes

Ingredients:

4 cups spinach leaves, baby

2 sliced pears, ripe

1/2 lemon, fresh, juice only

1 tbsp oil, olive

1 tbsp mustard, Dijon

1 pinch pepper, ground

Instructions:

Place leaves of spinach on a platter. Top them with sliced pears.

Combine oil, ground pepper, mustard, and lemon juice in a small jar. Cover with lid and shake well.

Pour dressing on the salad. Gently mix. Serve.
