Fries alla Carbonara

These French fries are delicious on their own or served with chicken; rich, creamy and very moreish.

Servings: 2

Total Time: 50mins

Ingredients:

1 pound potatoes (peeled, sliced)

3 ounces pancetta (diced)

2 tbsp olive oil

Black pepper

3 tbsp pecorino cheese (grated)

Directions:

1. Preheat the main oven to 400 degrees F.

2. In a baking pan, combine the potatoes with the pancetta, oil and black pepper.

3. Arrange the pan on the middle oven rack and bake for between 30-40 minutes, or until the potatoes are cooked through and fork tender.

4. Remove from the oven and immediately scatter with grated cheese, and sprinkle with lots of black pepper.

5. Serve.
