In a small bowl, stir together the yogurt, 1 tablespoon of the sunflower seeds, and the honey.

Spoon ¼ cup of yogurt into the bottom of two serving dishes or parfait glasses. Sprinkle 2 tablespoons of granola into each dish and top with one-quarter of the banana slices. Repeat the layering using the remaining yogurt, granola, and bananas. Drizzle the parfaits with honey, sprinkle with the remaining 1 tablespoon of sunflower seeds, and serve right away.

Stone Fruit Parfaits with Minted Yogurt

The plum, cherries, grapes, and prunes not only add color and flavor to these parfaits, they’re also rich in brain-healthy polyphenol antioxidants. The orange is included for flavor and color contrast and for added vitamin C. If you like, sprinkle some Elemental Granola or the granola of your choice over the parfaits just before serving to give them some textural interest and grainy, nutty goodness. MAKES 2 SERVINGS

1 small orange

1 ripe, firm plum, pitted and coarsely chopped

1 cup sweet red cherries, pitted and coarsely chopped

1 cup seedless red grapes, halved

¼ cup pitted prunes, coarsely chopped

½ cup freshly squeezed orange juice

2 tablespoons freshly squeezed lemon juice

2 cups low-fat or nonfat plain Greek-style yogurt

½ cup chopped fresh mint leaves, plus 2 sprigs mint for garnish

1 tablespoon honey
