DIRECTIONS

In a large pot, cook pasta* to package directions. Add frozen peas near the end of cooking.

In another pot, add milk,* onion powder, and shredded cheese.* Whisk well, and bring to a simmer.

As soon as cheese* melts, reduce heat to low, and add to drained peas and rigatoni. Add ham, and gently combine.

COOKING TIP

This sauce is very light. If you prefer a thicker sauce, you can make a roux first, and then add the liquid and cheese. To make a roux:

Melt 2 T butter or butter substitute* in a saucepan over low/medium heat.

Add 2 T flour (rice flour works nicely), and whisk into the butter* until combined.

Slowly add about 1 cup of milk or milk substitute,* and mix until smooth and thickened. Turn off heat.

Stir in cheese* until combined.
