FISH CURRY

This classic Asian dish provides you with the low-fat protein of fish spiced up with the clean refreshing flavours of coriander, lime and chilli, with the coconut milk blending it all together.

SERVES: 4

PREPARATION: 15 MINUTES

COOKING TIME: 25 MINUTES

INGREDIENTS

For the curry paste:

• 1 green chilli

• 1 garlic clove

• a thumb-sized piece of ginger

• 1 tsp ground cumin

• 1 tsp ground turmeric

• juice of ½ lime

• a handful of coriander leaves

For the curry:

• 2 tbsp vegetable oil

• 1 onion

• 500g cod, diced

• 1 sweet potato

• 400ml tin coconut milk

• 200g green beans

• salt

• a handful of coriander leaves

• 1 lime

METHOD

Chop and blend together all the curry paste ingredients, adding water if needed to create a smooth paste.

Heat the oil and gently fry the paste for a couple of minutes, stirring frequently. Finely chop the onion and cook on a low heat until it is translucent, before adding the fish and the sweet potato, peeled and diced.

Stir for a further couple of minutes and then pour in the coconut milk and add the beans. Simmer for a further ten minutes until the beans and potatoes are soft. Add salt to taste. Garnish with the coriander leaves and serve with wedges of lime.
