1 ripe avocado, sliced

1 cup cherry tomatoes, halved

4 eggs

1 onion, chopped

1 tbsp olive oil

Salt and black pepper to taste

1 tbsp parsley, chopped

1 tsp thyme

1 tbsp lime juice

Instructions

Heat up the tortillas and place on a serving plate.

Add the avocado slices, cherry tomatoes and parsley on top.

Scramble the eggs with olive oil and salt and pepper.

Add on top of the tortillas. Add the onion, thyme, salt, pepper on top. Serve.

Egg Benedict

We all love egg benedict, this one is fancy with beef bacon, a little bit of dill and the tahini.

Preparation Time: 5 minutes

Cooking Time: 15 minutes

Serves: 2
