Beef Satays (Satai Daging)

1 kg (2 lbs) beef loin or rump, diced

3 tablespoons oil

1 to 1 ΒΌ liters (4 to 5 cups) water

20 to 25 bamboo skewers (see note)

3 tablespoons rice flour

1 tablespoon sago or tapioca flour

1 tablespoon oil, for grilling

Crispy Fried Shallots (page 24), to garnish

Marinade

1 turmeric leaf

4 kaffir lime leaves

1 stalk lemongrass, thick bottom part only, tough outer layers discarded, inner part bruised

2 slices asam gelugor (dried garcinia fruit), soaked in warm water to soften

2 teaspoons salt
