1. Spray a large, non-stick saucepan with Fry Light and place over a medium heat. Add the leek, fennel, garlic and fennel seeds and stir-fry for 2–3 minutes.

2. Add the tomatoes, stock and bouquet garni and bring to the boil. Stir in the salmon, bring back to the boil, then reduce the heat and simmer gently for 5–6 minutes or until the salmon is cooked through. Season with the salt, pepper and cayenne pepper and divide the fish between four large, shallow bowls.

3. Strain the soup and ladle it over the fish. Garnish with the parsley and serve immediately.
