Baked Mozzarella Marinara Spread

Think of a cheese pizza baked in a wood-fired oven and you’ll understand why this spread is a crowd pleaser. Slather this baked marinara spread, which is topped with bubbly, cheesy mozzarella, on bruschetta or crostini for a warm, big-flavored appetizer. The tomato sauce is slow cooked, chock full of mellowed onions and garlic, given a kick of crushed red pepper, and finished with an herbal infusion of fresh basil.

1 tsp EXTRA-VIRGIN OLIVE OIL

1½ cups/200 g minced WALLA WALLA OR OTHER SWEET ONION

1 tbsp minced GARLIC

1½ tsp SUGAR

1 can (14.5 oz/415 g) CRUSHED TOMATOES in thick purée

½ cup/120 ml WATER

¼ cup/60 ml TOMATO PASTE/TOMATO PURÉE

1½ tsp CRUSHED RED PEPPER

1½ tbsp finely minced FRESH BASIL LEAVES

¼ cup/30 g freshly grated PARMESAN CHEESE, preferably Parmigiano-Reggiano

¾ cup/85 g shredded REDUCED-FAT MOZZARELLA CHEESE

SKINNY DIPPERS: Bruschetta, Herbed Cheddar Cheese Straws, Crostini, Grilled Japanese Eggplant, slices of fresh baguette

1. 10-in/25-cm nonstick sauté pan, heat the oil over medium-low heat. Add the onion, garlic, and sugar. Sauté, stirring frequently, until the onion glistens and begins to soften, about 4 minutes. Add the crushed tomatoes, including any juice from the can, along with the water, tomato paste/tomato purée, and crushed red pepper. Bring to a simmer, stirring frequently. Adjust the heat to low and cook, uncovered, stirring occasionally, until the tomato mixture is thick, about 45 minutes. Add the basil and Parmesan and continue to cook, stirring occasionally, another 5 minutes. Remove from the heat. Transfer to an oven-to-table, 1-qt/1-L shallow baking dish.

2. Position an oven rack about 4 in/10 cm below the heat source and preheat the broiler/grill. Scatter the mozzarella cheese evenly over the marinara spread. Broil/grill until the cheese bubbles and is beginning to brown, about 1 minute. Serve immediately.

DIP DO-AHEAD: The spread, without the mozzarella topping, can be prepared, covered, and refrigerated up to 2 days in advance. Remove from the refrigerator 40 minutes before serving. Heat the spread in a small saucepan or in the microwave until hot. Scatter the mozzarella over the top and broil/grill just before serving.
