Crispy Noodles

Ingredients

200 gm noodles

2 tbsp flour

2 cups oil for frying

Method

Boil noodles as given on page 39.

Sprinkle flour on noodles to absorb any water present.

Heat about 2 cups of oil. Add ΒΌ of the noodles. Stir, turning sides till noodles are golden in colour and form a nest-like appearance. Remove from oil.

Drain on absorbent paper. Fry the left over noodles in the same way. Cool and store in an air tight tin.

How to assemble

Remove the iron sizzler plate from the wooden base. Put 2-3 tbsp water and oil mixture in the wooden base and keep aside. Rub oil generously on the iron plate on both sides. Heat the plate by keeping it directly on the flame. Let it get very hot. Reduce flame.

Fill the plate, keeping it on fire. On one side of the plate place the chicken in black bean sauce and the other half side arrange the noodles.

With the help of a firm pair of tongs (sansi), remove plate from fire and place on the wooden tray.

Repeat with the remaining ingredients on the other sizzler plates to make another sizzler.
