Ratatouille

2 large onions, finely chopped

2 aubergines

1 courgette

2-3 red peppers

3-4 ripe tomatoes, peeled

100 ml of olive oil

salt and pepper

TIP: The tomatoes must be ripe. If unavailable, substitute with a tablespoon of tomato paste and 100 ml of water

Cut the unpeeled aubergines into small cubes. Slice the courgette into 1cm thick rounds, and the peppers into 1cm strips.

Heat the olive oil in a deep saucepan.

Add the onions, and cook over a moderate heat until they soften.

Add the peppers, and cook for 5 minutes, then add the aubergine and courgettes.

Stir well, cover the pan, and cook for another 10 minutes.

Add the tomatoes (or tomato paste and water, if using), and simmer with the lid on over a low heat for 20 minutes or until cooked. (If there is too much water in the pan, uncover the ratatouille, and cook until reduced.)

Season with salt and pepper.

Serves 4
