This Mediterranean dish’s secret is sautéing the peppers. If you want to spice it up to give it a zing, do not neglect the lemon, spices, and capers. To achieve a much creamier texture, you must learn the secret behind the Lebanese Hummus: add 2 tablespoons of chilled water to the processor towards the end and blend for a few seconds.

Ingredients

1 can of drained, liquid-reserved chickpeas

Pepper: ¼ teaspoonful

½ lemon juice

¼ teaspoon paprika

1 tablespoon capers

Salt: ¼ teaspoon

Extra Virgin Olive oil: 2 tablespoons

Balsamic vinegar: 1 teaspoon

1 heap tablespoon tahini
