Cook one chicken breast half for a main dish, and save the other one for a tasty sandwich on a hoagie bun the next day!

1 boneless chicken breast, halved

1 tsp sesame oil

2 tsp Dijon mustard

1 Tbsp low-fat sour cream

2 Tbsp chopped onion

1/2 Tbsp chopped garlic

1/2 tsp paprika

Fresh ground pepper to taste

1 Preheat the oven to 375 degrees. Spray a small shallow baking dish with nonstick cooking spray and place the chicken in the baking dish.

2 Mix together the sesame oil, mustard, sour cream, onion, and garlic in a small bowl. Brush the sour cream mixture on both sides of each breast with a pastry brush.

3 Sprinkle the chicken with paprika and black pepper and bake for about 30 minutes.

4 To microwave, cover the baking dish loosely with plastic wrap. Microwave for 6 to 8 minutes on high, or until the juices run clear. Be sure to rotate the dish halfway through the cooking time for even cooking.
