Old-Fashioned Coleslaw with Apples
Although apples might seem like a new twist on this traditional recipe, a lot of old cookbooks include coleslaw recipes with apple in them. A mix of carrots, plus green and red cabbage, makes this recipe as colorful as it is tasty. If making a day ahead (it will still be good but a little more wilted), substitute green for the red cabbage because the red cabbage will eventually turn the whole salad pink.
SERVES 6
1 large tart green apple, such as Granny Smith, cored, peeled, and diced
1 tablespoon freshly squeezed lemon juice
4 cups shredded green cabbage
1 cup shredded red cabbage
1 cup shredded carrots
½ cup chopped radishes
DRESSING
½ cup mayonnaise
2 tablespoons sugar
2 tablespoons white wine vinegar
2 teaspoons celery seed
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Combine the apple with the lemon juice in a large nonreactive bowl and mix thoroughly. Add the green and red cabbage, carrots, and radishes.
To make the dressing: In a small bowl, stir together the mayonnaise and sugar until the sugar is dissolved. Add the vinegar, celery seed, salt, and pepper. Add the dressing to the vegetables and gently toss to coat. Cover and chill until ready to serve.
