You can serve these pork chops over cauliflower mash, a bed of greens, or cut into pieces and have with a salad.

Slow Cooker Lamb

Serves 6 - Prep time: 5 minutes - Cook time: 5 hours

Ingredients:

3 lb. Leg of Lamb

1/3 Cup Olive Oil

3 Tbsp. Whole Grain Mustard

2 Tbsp. Maple Syrup

5 Sprigs Thyme

8 Leaves of Mint

2 tsp. Rosemary

2 tsp. Minced Garlic

2 tsp Salt and Pepper

Method:

Cut 4 even slits across top of lamb with a good knife.

Place the lamb into the slow cooker and rub the lamb down with butter or olive oil, mustard, maple syrup and then the salt and pepper.

Put the garlic and rosemary together packed tight in each slit you made across the top of the lamb.

Cook for 5 hours on medium, add thyme and mint, then cook for additional 30 minutes.
