SOUTHERN SHRIMP CHOWDER

While you won’t find corn or heavy cream in this chowder, it is hearty and satisfying with cauliflower rice, red pepper, onions, coconut milk and a bit of Cajun seasoning. You’ll love this healthier version and feel just as satisfied as you did with the traditional one!

MAKES: 4 SERVINGS

2 tbsp (30 ml) ghee

2 ribs celery, minced

1 large onion, diced

1 red pepper, diced

1 cup (230 g) cauliflower, riced

8 oz (227 ml) Chicken Stock

1 (15-oz [425-ml]) can coconut milk

1 heaping tsp (2 g) Cajun seasoning

½ tsp garlic powder

½ tsp onion powder

2 cups (650 g) raw frozen shrimp

3 tbsp (18 g) arrowroot, tapioca or cassava flour

Additional sea salt and pepper, to taste
