Chapter 6 Asparagus

Risotto

1 red onion

1 bunch asparagus

5 cloves garlic

15 crimini mushrooms

1 teaspoon dried thyme

1/2 teaspoon salt

1/2 cup white wine

1 cup Arborio rice

3 cups vegetable broth

1 bunch spinach

1/4 teaspoon onion powder

2 teaspoons nutritional yeast

1 1/2 teaspoon lemon juice

Instructions:

1. Peel and dice onion fine.

2. Mince garlic and add to onion.

3. Heat onion and garlic in skillet until onion is translucent.

4. Add mushrooms, thyme and salt. Cook about six minutes until mushrooms are soft.

5. Cut the asparagus into two inch pieces removing any woody stalks.

6. Add asparagus to mixture.

7. Add the rice and part of the white wine and broth.

8. Cook for a few minutes and add more liquid.

9. Continue adding liquid until you have incorporated all of the liquid.

10. Add the lemon juice, spinach, onion powder and nutritional yeast.

11. Remove from heat and stir well.
