Spicy pumpkin with sausage pasta sauce

Pumpkin is one of those superfoods that’s available all year long, as you can always have it whenever you want without worrying about being out of season. When combined with sausage, it makes a perfect pasta sauce that’s delicious, creamy and very nutritious. The leftovers can keep in the refrigerator for up to 3 days.

Preparation time: 30 minutes

Serves:4

Ingredients:

 Canned Pumpkin – 1 cup

 Extra virgin olive oil – 3 tablespoons

 Hot Italian sausage, cubed – 1.5 pounds

 Yellow onion, chopped – 1

 Garlic, chopped – 4 cloves

 White wine, dry – 1 cup

 Chicken broth – 1 cup

 Half&half – ½ cup

 Cinnamon – 1/8 teaspoon

 Nutmeg, ground – ½ teaspoon

 Sage leaves, chopped -6

 Red pepper flakes – ½ teaspoon

 Kosher salt and pepper to taste

 Parmigiano cheese for topping

Method:

 Coat your sauce pan with olive oil and place over medium-high heat

 Add the sausage and cook until well browned. Remove from pan and place on a paper towel-lined bowl to drain excess oil

 Using the same pan, reduce the heat to medium and cook the chopped onion for about 1 minute

 Stir in the garlic and red pepper and cook for an additional 4 minutes

 Add your chopped sage and white wine and cook until the wine is reduced by half

 Stir in the remaining ingredients except for the cream and cheese and bring to a boil

 Add the cream and let it simmer for about 7 minutes

 Season with salt and pepper and remove from heat

 Garnish with additional sage and cheese and Serve immediately
