Toppings to mix and match

capers, sliced olives, sliced tomato, sliced onion

1–2 slices smoked salmon

chilli flakes

leafy salad, to serve

Split the pita in half and cover each piece with the passata or salsa. Add the capers, olives, tomato and onion. Top with the salmon and add a pinch of chilli flakes. Grill (broil) until the smoked salmon is hot. Serve with a big leafy salad.

Marinated salmon

1 bunch of coriander (cilantro)

2 tablespoons Lemongrass Paste

2 garlic cloves, finely chopped

2 tablespoons finely chopped ginger

4 salmon tail fillets, pin-boned

1 cup tamari or soy sauce

juice of 2 limes

1 bunch of spring onions (scallions), finely chopped

boiled potatoes and salad, to serve
