1 onion, chopped

1–2 tsp ground allspice

2 tbsp tomato purée

2 tbsp soy sauce

2 tsp thyme leaves

4 pork spare rib chops, trimmed of fat

600ml (1 pint) chicken stock

salt and freshly ground black pepper

FOR THE RICE AND PEAS

4 rashers of streaky bacon, chopped

2 shallots, finely chopped

1 Scotch bonnet chilli pepper

400g can kidney beans, drained

sprig of thyme

1 chicken stock cube

225g (8oz) long grain rice

400g can coconut milk
