One day, my mom called me in excitement: she had coated some mushrooms in fat, thrown them in the oven, and roasted them with some meat for a hurried weeknight meal. She hadn’t anticipated anything special, but when she took the first bite, she just had to pick up the phone and tell me how amazing it was. A few experiments with this happy accident later, and we’re officially hooked. Roasted meat and mushrooms, people! Tell your friends!

2 tablespoons extra-virgin olive oil

1 tablespoon minced fresh ginger

1 tablespoon minced garlic

1 teaspoon fish sauce

12 ounces skirt steak, hanger steak, or flap meat, cut crosswise into 2 pieces

4 cups whole shiitake or cremini mushrooms (about 6 ounces)

2 tablespoons ghee or lard, melted

1½ teaspoons fine salt

1 tablespoon coconut aminos, for drizzling

Leaves from 2 sprigs fresh cilantro, for garnish
