Directions:

In a skillet, heat the oil on a medium heat. Sauté the onion and garlic for 4 to 5 minutes. Add the bell pepper and zucchini, and sauté for a further 2 minutes.

Add the remaining ingredients to the skillet. Bring to the boil before transferring the vegetable mixture into a slow cooker.

Set the slow cooker on high. Cover and cook for 3 to 4 hours.
