Warm Smoked Salmon and

Cucumber Salad

Hands-on time: 10 minutes

Cooking time: about 5 minutes

½ tbsp vegetable oil

2.5cm (1in) piece fresh root ginger, peeled and finely chopped

1 green chilli, seeded and finely chopped (see Safety Tip)

1 tbsp sesame seeds

6 baby sweetcorn, finely sliced

300g (11oz) straight-to-wok rice noodles

1 cucumber, peeled into ribbons

1 tbsp toasted sesame oil

1 tbsp light soy sauce

120g pack smoked salmon trimmings

salt and freshly ground black pepper

a large handful of fresh coriander, finely chopped, to garnish

lime wedges to serve

1 Heat the vegetable oil in a large frying pan or wok. Add the ginger, chilli and sesame seeds and cook for 1 minute. Stir in the baby sweetcorn and noodles and cook, stirring frequently, for 3 minutes or until the noodles are tender.

2 Add the cucumber, sesame oil, soy sauce and smoked salmon trimmings and heat through. Check the seasoning. Garnish with coriander and serve immediately with lime wedges to squeeze over.
