Moroccan lamb and lemon tagine

A TAGINE IS A MOROCCAN STEW MADE IN A TAGINE POT. LUCKILY YOU CAN ALSO MAKE THIS DISH IN THE OVEN IN A CASSEROLE DISH AFTER YOU HAVE BROWNED THE MEAT. AND IF YOU CAN FIND SOME SAFFRON, A FEW STRANDS WILL TAKE THIS STEW TO A NEW LEVEL.

2 Tbsp coconut oil or lard

1 kg stewing lamb

1 tsp salt

2 Tbsp crushed garlic

1 onion, chopped

2 Tbsp Moroccan Spice (p. 135)

4–6 cups water

Juice of 1/2 lemon

1 cinnamon stick

1/4 cabbage, shredded

1 tomato, chopped

2 cups cubed pumpkin

1 Tbsp xylitol

4 Tbsp butter

Grated zest of 1 lemon
