Carrot Ginger Soup

I learned to love this soup when I lived in London. On those cold and rainy days it was a really great way to perk up. The ginger gives you a kick-start and the smoothness of the carrot warms your belly.

Ingredients

60 g (2 ¼ oz) unsalted butter

1 large white onion, chopped

2 tablespoons fresh ginger, peeled, and finely chopped

2 garlic cloves, minced

600 g (1 lb 5 oz) carrots, peeled, chopped

750 ml (26 fl oz) water

1 vegetable stock cube

salt and black pepper

4 tablespoons sour cream

a few sprigs fresh coriander (cilantro)

Method

In a heavy saucepan, melt the butter over low heat. Add the onion and sauté 4 minutes, or until translucent. Add the ginger and garlic, and sauté for 3 minutes. Add the carrots, sauté 1 minute, and add the water and stock cube. Bring to a boil. Lower the heat, partially cover the pan, and simmer until the carrots are very tender, about 20 minutes. Remove from the heat and let cool slightly.

Purée the soup in batches, in a blender or with a handheld mixer. Return the soup to the pan, and season with some salt and black pepper. To serve, ladle the soup into bowls, and top each with a spoonful of sour cream and a sprinkling of fresh coriander.
