Chapter 2

PUDDINGS, PASTRIES, AND SWEETS

Plum and Cider Compote

Stewed fruit desserts are a hallmark of the Ashkenazi dessert canon. Naturally light and dairy-free, they close heavy, meat-centric meals on a simple and sweet note. Compotes made of either dried or fresh fruit (and often a combination of both) are commonly served on Passover, Rosh Hashanah, and Sukkot. This version softens juicy plums in a mix of apple cider, wine, and sweet spices. Serve it alone, spooned over ice cream, or paired with Cinnamon-Sugar Sponge Cake (65), Coconut Meringue Macaroons (19), or Arroz con Leche (91). Leftovers are delicious for breakfast, served with plain or vanilla yogurt.
