PREP

POSITION a rack in the center of the oven, and preheat to 300 degrees F. Liberally grease a 9x13-inch glass pan.

MIX the coconut milk and apple cider vinegar together in a liquid measuring cup. Set aside.

GINGER CAKE

WHISK the flour, ginger, pumpkin pie spice, baking soda, baking powder, and salt together in a large bowl.

BEAT the eggs, butter, and sugar together in a separate bowl. Add the coconut milk (from step 1) and vanilla, and whisk to combine.

COMBINE the wet ingredients and dry ingredients together in the larger bowl, using a spatula to stir and make a thick batter.

POUR the batter into the prepared 9x13 pan. Spread the batter evenly across the width and length of the pan with a spatula. Give the pan a few gentle "shakes" back and forth and side to side to settle the batter. Bake in the center of the oven until a toothpick comes out clean, about 40 minutes.
