Eggplant Parmesan

Servings: 4

Preparation Time: 1 hour 20 minutes

INGREDIENTS

1 large eggplant

1/2 tsp salt

1 large egg

1 tbsp. almond milk

1/2 cup almond flour

1/2 cup coconut flour

1 tsp Italian Seasoning

1 cup parmesan cheese

cup coconut oil for frying

DIRECTIONS

Cut the eggplant into 1/4” rounds. Sprinkle them with salt on a cookies sheet and reserve for 45=60 minutes/

Set up a standard breading station: whisk the eggs in one bowl and season, place the parmesan cheese in another bowl, and mix the flours and Italian seasoning together in a separate bowl and season.

Pat the eggplant dry, then dip each slice in the egg, then the cheese, and finally the flour. Heat the frying oil in a heavy bottomed saucepan.

When the oil is hot, drop the eggplant slices in and fry until golden brown on both sides. Turn the eggplant once you see a ring of golden brown just on the bottom edge of the eggplant. Each side should cook 3-5 minutes.

Drain on paper towels and season with salt as needed. Serve warm.
