INGREDIENTS

1 lb. boneless skinless chicken breasts

1 tbsp. olive oil

1 cup coconut cream

1 cup chopped green onions

1 tsp. garlic, minced

4 cans low-sodium chicken broth

1/2 tsp ground cumin

Salt and freshly ground black pepper

3 tbsps. fresh lime juice

DIRECTIONS

In a large pot heat 1 tbsp. olive oil over medium heat. Once hot, add green onions and garlic. Sauté until tender, about 2 minutes.

Add chicken broth, cream, cumin, season with salt and pepper to taste and add chicken breasts. Bring mixture to a boil over medium-high heat.

Then reduce heat to medium, cover with lid and allow to cook for 10-15 minutes, stirring occasionally, until chicken has cooked through.

Stir in lime juice.

Sprinkle chopped parsley on top.

Serve hot and enjoy.
