Ingredients:

4 medium chicken breasts

Salt and pepper

4 sun-dried tomatoes, chopped

¼cup sliced olives

¼cup Avocado and Kale Pesto

6 oz regular mozzarella cheese

2 Tbsp extra-virgin olive oil

Instructions:

Preheat the oven to 400°F.

Cut 5 to 7 slits widthwise into each breast, about ½ inch apart. Season each piece with salt and pepper.

Place the sun-dried tomatoes and olives in a bowl and combine with the pesto.

Cut the mozzarella into thick slices—as many slices as needed to fill the chicken slits. Stuff each slit with a slice of mozzarella and a little of the olive-tomato-pesto mixture.

Season the stuffed chicken with salt and pepper, and place on one side of a large baking sheet.

Bake for about 25 minutes, until the chicken is cooked through and the cheese is bubbling and lightly browned.

Drizzle with olive oil and serve immediately.
