Slow Cooked Roasted Pork and Gravy

Serves 6

Ingredients:

½ tablespoon salt

2 pound pork roast

1 bay leaf

2½ cups water

5 peppercorns

2 teaspoons dried thyme

1 1/3 ounces of fresh ginger

1 tablespoon paprika powder

2 garlic cloves

1 tablespoon olive oil

½ teaspoon powdered black pepper

Creamy Gravy:

1½ cups double cream

Juice from the roast

Directions:

 Set your oven at 200. Grease an oven-proof dish. Season the meat as required and put enough water in so that 2/3 of the roast is covered. Add the pepper and the bay leaf. Cook for between 7 and 8 hours, or until cooked throughout.

 Set the stove to 450. Remove the remaining juices from the dish and keep for the gravy. Mix together the finely chopped ginger and the garlic. Stir in the pepper, herbs and oil. Brush the roast with the mixture and put it back in the oven for about 15 minutes.

 Gravy: Put the juice through a sieve and discard the solids. You will need three cups of pan juices- if you don’t have enough, add water. Put into a saucepan. Set your stove to Medium and bring the juices to a boil until the liquid is reduced by half. Stir in the cream. Allow it to came to a boil and then reduce the heat to Low. Allow to cook gently until it is a thick as you like it, stirring often.
