284. DATE AND BANANA PRESERVE

Take one pound of dates, stone them, and slice in strips lengthways. Take four bananas peeled and very thinly sliced. Put into a preserving-pan with one pound of sugar, and let simmer for twenty minutes, stirring and skimming well. Then boil until the preserve is thoroughly thickened and will set.

285. DATE AND CARROT PRESERVE

Take three pounds of dates, stone and chop them fairly small; peel two pounds of carrots and put them through mincer. Place both in preserving-pan with three-quarters of a pint of water and two pounds of sugar; let boil twenty minutes ; add one-third of a teaspoonful of essence of almonds (or not more than twenty drops), and simmer for another quarter of an hour. Pour off into pots, but do not cover till next day.
