pickled cucumbers

Makes about 2 dozen

8 ounces Kirby cucumbers, sliced into thin rounds

1 teaspoon kosher salt

1 teaspoon sugar

Put the cucumbers in a bowl. Toss them together with the salt and sugar. Set aside for at least 30 minutes before using.

scallion-soy sauce

Makes about ¾ cup

½ cup soy sauce

2 tablespoons rice wine vinegar

1 teaspoon toasted sesame oil

2 scallions (white and green parts), minced

In a small bowl, whisk together the soy sauce, vinegar, sesame oil, and scallions. Set aside until ready to serve.
