baked pork spring rolls
LIKE VEGETABLE SPRING ROLLS (PAGE 108), THESE spring rolls can be served unbaked, but the cooked ground pork lends itself to being baked into a crispier wrap. The combination of ground pork, soy sauce, sesame oil, and freshly grated ginger is the key to these spring rolls’ special taste, and it mellows beautifully during baking.
MAKES 10 SPRING ROLLS
½ pound ground pork
1 garlic clove, smashed and peeled
1 cup shredded green cabbage
1 large carrot, cut into a julienne
2 scallions, thinly sliced by cross-section
2 tablespoons chopped fresh cilantro
1 teaspoon toasted sesame oil
2 tablespoons gluten-free soy sauce or tamari
2 teaspoons grated fresh ginger (or 1 teaspoon dried ginger)
1 recipe Wonton Wrappers (page 191), shaped into 10 7-inch squares
Egg wash (1 egg beaten with 1 tablespoon water)
