20. Salmon Pasta Casserole

Ingredients

6 ounces corn pasta, gluten free

1 can salmon, drained

1 can artichoke hearts, drained, chopped

2 scallions, chopped

2 tomatoes, cut into smaller pieces

1 cup Parmesan cheese, grated

1/4 cup canola oil

1 tablespoon lemon juice

Water

Method

1. Add the pasta, artichoke, scallions and canola oil in the slow cooker and cover with water. Cook on low temperature for 2 hours.

2. Stir in the salmon, lemon juice and cheese and continue cooking for another hour, on low temperature.

3. Transfer to serving plates, stir in the tomatoes and mix to incorporate well. Serve warm.
