1. In a large pot over medium heat, heat the oil and sauté the shallots, onion, carrot, parsnip, and celery until the vegetables are softened, about 5 minutes. Add the tomatoes, squash, and garlic. Cover the pot and cook, about 5 minutes. Add the stock and bring to a boil. Reduce the heat to a gentle simmer and add the beans. Continue simmering until all the vegetables are cooked through, about 15 minutes. Season to taste with salt and pepper. Add the kale and simmer, covered, until the kale softens, about 5 minutes more. To serve, garnish each bowl with a sprinkling of parsley and oregano and a dollop of pesto.
