Cherry Souffle

This recipe is a light and delicious souffle, which can be produced not only with cherries but with many sorts of fruit (also from glass or can). It is served as a dessert. But according to my opinion it tastes best with fresh sweet or sour cherries.

At first distribute 1 ½ lb. stoned sweet or sour cherries in a flat, buttered souffle pan. Then beat a liquid batter out of 3 eggs, 3 oz. flour and 0,1 l cream. The batter is flavored with ground cinnamon and cherry brandy, as desired. Then fill that batter carefully over the cherries and bake it at middle heat approx. 30-40 minutes. Serve still warm with confectioner’s sugar and cream. You should have a cup of good coffee in addition.
