1. Put all the ingredients into a blender (I use a Vitamix) and blend until smooth. You can add a couple of ice cubes to make it really cold, if you wish. Serve.

Chewy Chocolate, Almond & Cranberry Brownies

I don’t often eat desserts and treats as they are usually not very healthy or good for us, but it is possible to make a few improvements on traditional recipes to reduce the suffering and pain later on. I have been experimenting with these healthy chocolate chip brownies for months (my niece and nephew are addicts and also my critics, and they gave them the thumbs up). So, as it’s the season of chocolate and indulgence then go ahead, but just have a little bit though and remember to share them! As it’s the festive season I have included cranberries, but these brownies are also YUMMY with raspberries or blackberries.

140g raw almond butter or nut butter of choice

2 tbsp chia seeds

5 tbsp cold filtered water

½ tsp ground pink Himalayan salt

½ tsp gluten-free bicarbonate of soda

65g coconut palm sugar

½ tsp vanilla powder or extract

3 tbsp dried cranberries (optional)

125g organic dark chocolate (at least 70%), cut into small chunks
