Chocolate Hot Amaranth Breakfast Cereal SERVES 4

Worried that your sweet tooth and love of chocolate will get in the way of eating complete? Think again. Ancient grains such as amaranth are a simple way to boost your nutrient intake, and they can be easily flavored with cocoa powder and honey. A staple food of the Aztecs, amaranth is a tiny grain, high in the minerals magnesium and manganese, which cooks in less than 30 minutes. Look for amaranth in your local health food store, or shop in bulk online and store bags in your freezer or fridge to extend their shelf life.

1½ cups amaranth

3½ cups water

2 tablespoons unsweetened cocoa powder

1 tablespoon honey

¼ cup unsweetened shredded coconut

2 cups diced strawberries

Place the amaranth in a large saucepan along with the water and bring to a boil over medium heat. Reduce the heat to a simmer and cook, stirring every 5 to 8 minutes, until creamy, 20 to 25 minutes in total. During the last few minutes, stir in the cocoa powder. Turn off the heat and stir in the honey. If the porridge seems too thick, add a few tablespoons of water. Sprinkle with coconut and berries and serve.
