Egg Drop Soup

Gluten-Free, Dairy-Free, Detox-Friendly

Makes 4 servings | 130 calories per serving

4 cups chicken stock (page 217)

¼ teaspoon salt

¼ teaspoon minced fresh ginger (not bottled)

3 tablespoons water

1½ tablespoons cornstarchMMGF

4 egg whites

Chopped fresh cilantro, for garnish (optional)

Heat the chicken stock in a saucepan over medium-high heat.

Add the salt and ginger and bring to a boil.

In a small bowl, stir the water and cornstarch together until smooth and set aside.

Whisk the egg whites in a small bowl, then set aside.

Drizzle the egg a little at a time into the boiling broth while stirring the broth.

Gradually stir in the cornstarch mixture until the desired consistency is reached.

Serve hot topped with cilantro.
