This was the first main course I ever served at the supper club, a dish I remember fondly despite the butterflies associated with it. That night I took ‘do-ahead dinners’ to excessive lengths – I laid the tables two days in advance, polishing cutlery and glasses, checking and rechecking salt cellars and pepper grinders, and chopping, peeling and cooking as much as I could. The evening went off without a hitch and this dish was a great success.
