Fresh and Savory Ravioli

Ingredients to make Ravioli:

3 cups flour

6 fl. oz. water (room temperature)

1 tbsp. extra virgin olive oil

Salt

Ingredients to make Ravioli's stuffing:

2 cups potatoes (pealed - boiled and mashed)

3/4 cup grated Parmesan Cheese

3/4 cup grated Pecorino Cheese

1/2 tsp. saffron

Fresh mint leaves (about 5 big ones or 8 small ones)

1 garlic clove

1 tbsp. extra virgin olive oil

Salt

Freshly ground black pepper

Procedure to make Ravioli's stuffing:

1. Sauté garlic in a pan with extra virgin olive oil until golden. Then take out the garlic and let the scented oil cool.

2. Put the cooled mashed potatoes in a bowl add garlic scented oil, grated cheeses, saffron, minced mint leaves, salt and pepper.

3. Blend all ingredients until you obtain a creamy mixture. This mixture will be the stuffing to fill your Raviolis.
