Turkey & Bacon Chowder

Prep time: 15 minutes, cook time: 35 minutes, serves: 8

Ingredients:

6 slices bacon, cut in 1-inch pieces

4 cups cooked turkey meat, shredded

1 large shallot, peeled and diced

1 ½ cups sweet potato, peeled and diced

½ cup celery, diced

½ cup half-n-half

½ cup sharp cheddar cheese, grated

1 tbsp. fresh thyme leaves, chopped

What yo u’ ll need from the store cupboard

8 cups turkey (or chicken) broth

1 tsp dried parsley

1 tsp xanthan gum

½ tsp liquid smoke

Salt & pepper to taste

Instructions:

Place bacon in a large saucepan and cook over medium heat until it is almost crisp.

After cooking bacon, reserve ¼ cup. Add shallots and celery to remaining bacon in the pan and cook until soft, about 5 minutes.

Add the broth, cream, and cheese, whisking until cheese is melted and the mixture is almost smooth.

Add in potato, turkey, parsley, and liquid smoke. Simmer 20 minutes, or until potatoes are soft.

Whisk in xanthan gum and cook another 5 minutes until slightly thickened.

Stir in thyme and season to taste with salt and pepper. Serve, garnish with more fresh thyme if desired.
