These pork chops are so easy to prepare and mouth-wateringly good.

1/3 cup Dijon mustard

3 tablespoons balsamic vinegar

1 teaspoon cumin

Salt and fresh ground black pepper, to taste

4 pork chops

2-3 tablespoons olive oil

For the Apricot-Mango Salsa

4 fresh apricots, pit removed, diced

1 ripe mango, peeled, diced

1/4 red onion, diced small

1/4 cup fresh basil, minced

1/4 cup extra virgin olive oil

1 teaspoon cardamom

1. In a bowl, mix mustard, vinegar, and cumin.

2. Sprinkle both sides of pork chops with salt and pepper. Brush mustard mixture onto pork chops, covering both sides.

3. Heat olive oil in cast iron grill pan or skillet over medium high heat. Add pork chops over cook for about 5 minutes per side, or until cooked through. Baste with mustard sauce when they’re flipped.

4. While pork chops are cooking, mix together ingredients for salsa in a bowl.

5. When pork chops are finished, top with salsa.
