28. LEBANESE LENTIL KIBBEH

Ingredients:

For the Kibbeh Shell:

- 1 cup green or brown lentils, rinsed and cooked

- 1 cup fine bulgur

- 1 large onion, finely chopped

- 2 tablespoons olive oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- Salt and black pepper to taste

For the Filling:*l

- 1/2 cup walnuts, chopped

- 1/4 cup red onion, finely chopped

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground allspice

- 1 tablespoon pomegranate molasses

- 2 tablespoons olive oil

- Salt and black pepper to taste

Steps:

Prepare the Kibbeh Shell:

1. In a food processor, combine cooked lentils, fine bulgur, chopped onion, olive oil, cumin, coriander, salt, and pepper.

2. Process until a smooth, dough-like consistency is achieved.

Prepare the Filling:

3. In a bowl, mix chopped walnuts, finely chopped red onion, ground cinnamon, ground allspice, pomegranate molasses, olive oil, salt, and pepper.

Assemble the Lentil Kibbeh:

4. Take a portion of the lentil mixture, shape it into a flat disc, and place a spoonful of the filling in the center.

5. Seal the edges, forming an oval or torpedo shape. Repeat with the remaining mixture.

Serve:

6. Serve the Lebanese Lentil Kibbeh chilled, drizzled with extra olive oil.

Note:

Adjust the seasoning and filling ingredients based on personal preferences.
