Breakfast

Couscous with Chickpeas

Serves: 4

Time: 6 minutes

1 cup cooked chickpeas

½ cup chickpea water

2 cups cooked couscous

½ teaspoon shoyu (natural soy sauce)

Place the chickpeas and water in a 2-quart saucepan over low heat; arrange the couscous on top. When the water starts to steam, mix the ingredients together. Add shoyu; cover, and heat for 5 minutes.

Lunch

Stir-Fried Vegetables

Serves: 4

Time: 10 minutes; 5 minutes

1 teaspoon sesame oil

¼ head red cabbage, chopped

2 stalks celery, chopped

¼ head chicory, chopped

1 teaspoon brown rice vinegar

1 teaspoon shoyu (natural soy sauce)

1 tablespoon water

Wash and chop the vegetables. Heat the oil in a skillet or wok over medium heat; add the cabbage, celery, and chicory in that order, stirring well after each addition. Combine the vinegar, shoyu, and water; sprinkle over the vegetables. Cover and steam for 5 minutes.
